The Chesapeake Bay has fed the Eastern Shore for generations, and one of the best parts of visiting Rock Hall, Maryland, is eating your way through the seasons. Blue crabs, oysters, rockfish and soft-shell crabs each have their moment on the Chesapeake Bay, and knowing when to order what makes a trip taste even better. Here is a season-by-season guide to Chesapeake Bay seafood, so you can sample the freshest catches.
Spring: Soft-Shell Crabs and the Season’s First Rockfish
Spring means soft-shell crabs. On the Eastern Shore, this means blue crabs caught between shedding one shell and hardening the next, then breaded and fried whole for a bite that is all crispy shell and sweet meat. Maryland’s rockfish (striped bass) season also opens in the spring, giving anglers and diners their first fresh catch of the year. Chester River Seafood, a Rock Hall market that sheds its own soft-shell crabs on site, is a great stop for both.
Summer: Peak Season for Blue Crabs
Ask any Maryland local, and they will tell you summer belongs to the blue crab. Summer is when Maryland crabs run heaviest and most plentiful, piled high on a paper-covered table and dusted with Old Bay. Waterman’s Crab House, on Rock Hall’s harbor, has been steaming crabs for decades and is a wonderful spot for cracking claws all summer. Osprey Point Restaurant serves delicious crab cakes packed with flavor.
Fall: Oysters Return to the Menu
As the water cools, oyster season begins, and Rock Hall sits right on the Maryland Crab and Oyster Trail. Fall is the time to order them raw on the half shell, fried, or stirred into a creamy stew. Oysters play a big role in Fall Fest, Rock Hall’s annual fall festival. Raw and fried oysters are offered at the event. In addition to oysters, Rockfish have a strong fall run too.
Winter: Oysters at Their Best
Oyster lovers know the old rule: eat them only in months with an “r,” and winter brings some of the sweetest, briniest oysters of the year. It is a quiet season in Rock Hall, perfect for a cozy dinner without the crowds. Ford’s Seafood, a Rock Hall staple known for its crab cakes and fried oysters, is a comfortable choice for a winter seafood dinner in town.
